CHOCOLATE ORANGE

Ingredients
Base: ⠀
1 cup (250ml) almond flour* ⠀
1 cup (250ml) oat flour ⠀
1/2 cup (125ml) coconut sugar ⠀
3 tbsp cacao powder 2 tbsp psyllium husk 10 tbsp water


Preparation
1. Mix psyllium husk with water, make sure no clumps are left. Set aside for a few minutes, until jelly is formed. ⠀
2. Mix the rest of the base ingredients in a bowl. Add the psyllium jelly and mix well (using your hands for this step would be more effective) until an elastic dough is formed. ⠀
3. Move to the freezer for 15 minutes. ⠀
4. Meanwhile mix all the cream ingredients. ⠀
5. Take the dough out and roll into a thin even layer. Roll it between 2 parchment paper sheets to avoid sticking. Trim the edges to make a neat square. ⠀
6. Spread the cream evenly, leaving about 1 cm edges. ⠀
7. Place into the freezer for around 20-30 minutes to set and then roll. ⠀
8. You can cut it directly and eat, or place the roll back into the freezer until you're ready to enjoy it with some coffee or tea.

Cream: ⠀
3/4cup (200 ml) coconut butter, softened 1/3 cup (80 ml) full fat coconut milk ⠀
1/4 cup (60 ml) liquid sweetener ⠀
Juice of 1/2 orange ⠀
Pinch of turmeric (for color, optional) ⠀

*For a nut-free version replace almond flour with more oat flour
